Çifteli is an Albanian musical instrument mostly used in the northern Albanian territories such as the areas of Kosovo, but can be found throughout the Albanian populated regions. It is also known in some areas by the names of dyzen, karadyzen, tamrre and tamburrase. The word Çifteli in Albanian literally means a pair of metal strings. Çift means a pair and Teli means metal string.

1 chicken (1 ½ lbs)
4 Tbs butter
1 cup peeled walnuts
6 garlic cloves, crushed

Simmer chicken in 6 cups of salted water until tender, about 1 hour. Remove chicken from cooking water, reserving 1-cup stock. Cool chicken slightly, then cut into 4 portions.

3 cups white rice, cooked
3 cups milk
⅔ cup sugar
2 tablespoons butter
½ cup raisins
1 teaspoon vanilla extract
1 teaspoon cinnamon, divided

Combine cooked rice, milk, sugar and butter in a medium saucepan. Add raisins and vanilla. Cook for 25 minutes until most of the liquid is absorbed.

Cream butter and sugar together in a large bowl. Add eggs. Mix. In a separate bowl, combine yogurt and buttermilk. In yet another bowl, sift together flour, powder and soda. Add yogurt-mix and flour-mix alternatively to the butter mixture, blending well. Add lemon grind and cinnamon.

1 romaine lettuce
1 bunch of green onions, chopped
2 hard-boiled eggs, sliced
salt & pepper
olive oil
lemon juice

Carefully wash the romaine lettuce and chop it up into pieces. Combine lettuce, chopped green onion and egg slices in a salad bowl. Add salt and pepper to taste. Right before serving, add olive oil and lemon juice to taste.
